When the Moon Hits Your Eye....



MMmmmm Pizza.... I love it, when it is done well there is nothing better- Serve it with a glass of vino, end with a cappuccino and tiramisu= perfecto!!
Topping Included- Pesto, Olive oil, Mint, Freshly squeezed lemon, Mozzarella, Fig, Onion, and Pecans. One of the best combos I have ever tried.... I dare you to make one for yourself tonight, my boyfriend LOVES these pizzas!!

Last nights dinner, Shrimp and Scallop Linguine Alfredo. YUM

I love anything with cream, butter and cheese, so of course this was the perfect meal choice!! So easy and most importantly delish!!

Ingredients:

-Shrimp (Cooked)
-Scallops
-Lemon
-Heavy cream
-Noodles of your choice(Fresh or dry), I had Linguine on hand
-Ricotta Cheese
-Butter, or margarine
-2 0r 3 cloves of Garlic
-Salt
-Pepper

Here are some additional Ingredients:

-Mushrooms
-Bacon
-Smoked Salmon
-Capers

Recipe:

This is so simple it will take around 20 minutes to prepare including the time it takes to cook the pasta.
- In a pot add water and salt and wait till it boils.
-Meanwhile in a saucepan add few tbsp's of butter and wait till it gets relatively hot.
-Slice up the the garlic cloves into strips and throw it in to the pan with the butter.
-At this point add the scallops, shrimp (if it is uncooked), mushrooms, bacon or anything that needs to cook a little. Wait for the shrimp it cooks very quickly.
-You may now add the cream according to how much sauce you want, this also goes for the butter/margarine.
-If the pasta looks about done add the shrimp to the sauce pan so it can cook a little.
-Squeeze half of a lemon into the sauce pan and mix in.
-The pasta should have cooked by now, so drain and add the sauce as you would like.
-Add some ricotta to the finished dish and serve with a small sprinkling of pepper.
- I like to always have some greenery so I made a small mint/spinach salad, and added some balsamic vinegar.
You must try this it is so good, remember though to eat in moderation!!

Watermelon and Feta Salad


Final Product


Tonight I decided to try something new. Be my boyfriend had chosen some Indian hors d'oeuvres so I wanted to find something that would balance it out. I am always looking for different things to put in my salad. Here is a simple, delicious, and healthy dish:

Grilled Salmon salad with Watermelon & feta cheese.

Salmon marinade- creates a sweet and zesty sauce:

1 teaspoon wasabe/wasabe mayo
1 teaspoon of honey
1 teaspoon of soya sauce

Mix together and cover the salmon in the sauce. Let sit meanwhile get started on the salad.
Salad (amounts vary on how much you want to make, I am just including the ingredients):

Mint leaves
Onion
Cucumber
Spinach leaves
Watermelon
Feta cheese

Now, place the salmon on a grill. We have a George Foreman so basically I just throw everything on there!!
Store bought Indian Hors d'oeuvres
While that is grilling (it only needs about 5 minutes)
Cut the ingredients and toss them in a bowl. Add pepper- I wouldn't add salt because the feta is already quite salty.

For the dressing I just used the remaining marinade sauce as well as 2 teaspoons of white wine vinegar.

When the salmon is done, you are ready to serve. I like to put the salmon on the salad. Its a lovely combination, lots of different tastes.

I served it with samosas and pakoras it was like a Greek/Indian/ Asian Fusion....
Try it- it's so good!! Don't be afraid of mixing fruits and vegetables together!!

Easy Fun and Delicious Recipe


This morning I decided to make pear tarts for breakfast- so yummy. I will give you a recipe- so incredibly easy I think that the whole thing took around 20 minutes!!

Ingredients:
-Pre made puff pastry dough
-Canned pear
-Icing sugar
-1 egg

Okay, so first of all set the oven at 350ÂșC and wait till it warms.

Meanwhile beat the egg in a bowl so that it is completely liquified.

Take a pizza cutter of knife and divide the puff pastry into 4 parts- or how ever many you plan on making.

Drain the pears, and place the desired amount on the puff pastry. Fold the corners in on each pastry then brush the top of the individual pastries with the egg.

Put the pastries into the oven and put on a kitchen timer for about 15 minutes- keep checking until it has browned.

Remove from the oven, and sprinkle icing sugar onto the top for pretty decoration- and taste!!
